Yum, yum, Wheat free Banana Oatmeal Coconut Cookies!
Ok, so it’s been a while since I posted anything about my wheat free diet, but after the successful cookie recipe I just did, I felt compelled to share it with the world (Even if the world means 2 people, including my husband & I…LOL!)
So here it is. It’s a modified recipe from the one given by my friend WaiLing to me. This cookie recipe is great to use up that last sad banana ripen away in your kitchen.
Wheat Free Modified Wilma’s Banana Oatmeal Coconut Cookies
1 Mashed Banana
1tsp Vainilla extact
3/4 cup of Brown Sugar or Demerara sugar
1 Egg; beaten
1/2 cup of melted Butter
1 cup of Gluten Free All purpose Baking Flour ( I used the Bob’s Red Mill brand)
1/2 tsp Baking Soda
1 tbsp of Tapioca powder
1/2 cup of shredded Coconut
2 cups of Oatmeal
Chocolate chips to taste
Almonds are also optional
Preheat oven to 350. In a large bowl mix together the banana, vainilla, sugar, egg & butter. Set aside
Mix together flour, baking soda, and tapioca. Then mix in coconut and oatmeal. Add dry ingredients to the wet ingredients and mix until just moistened. Then add chocolate chips.
Drop spoonful of batter on parchment paper lined cookie sheet. Bake for about 12 minutes until cookie starts to brown.
Get cookies on a cooling cookie rack.

See, for me a successful wheat free recipe or no gluten recipe, is that one in which you can’t tell by the taste or the texture that there is no wheat flour or that you used a substitute. This wheat free cookie recipe achieved just that. You would never know there is no wheat flour in it ;)
